Dining Highlights at Quivira Los Cabos

The Pueblo Bonito Resorts within Quivira Los Cabos are setting the pace for food and beverage trends in Los Cabos, itself one of the hottest culinary destinations in Latin America.

Peninsula

The gastronomic star of Pueblo Bonito Pacifica is Peninsula, a sophisticated gourmet restaurant featuring regional Baja cuisine. Known for its panoramic views of the sea, sky and beach, Peninsula, which debuted when the Towers at Pacifica opened in 2016, emphasizes local ingredients. Snacks and lunch are served from 12 noon to 5:00 p.m. and include small plates led by crispy ‘chocolate’ clams served with mango salsa and plantain chips. The dinner menu features a reinterpreted Caesar salad accompanied with crunchy nut bread and olive, serrano and ham tapenade; hot and cold appetizers (the grilled octopus with pork belly is exceptional); and a tantalizing array of land or sea entrees. These range from glazed Pacific tuna served atop udon noodles cooked with clams, peanuts and clam chorizo, to meats (such as rack of lamb with mint and fig sauce) cooked over charcoal grills. The stylish Peninsula Lounge offers superb artisanal cocktails.

LaFrida

The signature restaurant at Pueblo Bonito Sunset Beach, named in honor of famed Mexican artist Frida Kahlo, is a candlelit dining room that doubles as a showplace of cutting-edge Mexican cuisine. The new menu at LaFrida is both daring and eclectic. The appetizers—Blue Fin Tuna Tartare, Blue Corn Tlayuda and Cold Smoked Mackerel, and Blue Corn Gorditas--are truly appetizing. Entrees take their cue from various regions of Mexico, but many are unique to LaFrida. The Tumbada Rice has grilled octopus, charred clams and shrimp cooked in meco chili pepper butter, and is finished with golden pea sprouts and cheese chicharron. From the farm, there’s Suckling Pig, Pork Rib Confit and a new guest favorite, Local Barbacoa Style Goat, served with toasted corn mole sauce smoked with mesquite, grilled spring onions, tomatillo and flowering coriander. At LaFrida, modern cooking techniques transform traditional recipes into modern classics. The wine list, which prominently features bottles from the Guadalupe Valley in Baja California Norte, is excellent.

The Market at Quivira

The bustling food hall at Pueblo Bonito Sunset Beach capitalizes on the traveling public’s desire to sample global cuisines and enticing dishes in an informal setting. Inspired by famed culinary establishments in New York and London, The Market, featuring an array of eateries, has brought a new gastronomic food hall experience to Los Cabos. The brick-walled, open-floor complex features a classic deli, regional Mexican cuisine, eclectic Asian fare, a 1950’s-style diner, brick-oven pizzas, crepes (sweet or savory), fine chocolates and more. The Market’s hottest new addition is Perfect Balance, a wellness bar that offers vegan protein smoothies, superfood wellness bowls and healthy nourishing bites, including Avocado Sesame Seed Toast. Healthy cuisine never tasted so good! For sports enthusiasts, The After at Quivira is a beautifully appointed, urban-themed sports bar, with nearly a dozen flat-screen TV’s. The After’s menu offers American pub fare and Mexican comfort food plus a wide range of refreshments, including specialty cocktails and craft beers on tap.

Cibola

Tucked within the clubhouse at Montecristo Estate Luxury Villas, a stylish Tuscan hideaway within Quivira Los Cabos, Cibola is a tucked-away restaurant that offers fresh Baja cuisine to suit every taste at breakfast, lunch and dinner. Try the soups, notably the Pumpkin Soup With mussels and arugula pesto; and the traditional Gazpacho. The Paella Valenciana (seafood, fish and meats) is outstanding, as is the Risotto nero (octopus, artichoke, portobello mushroom and aioli). Desserts are highlighted by corn cake with guava ice cream, a local favorite. There’s also a fine selection of digestifs to follow the meal.
