Four Best Places for a Margarita in Quivira

The Margarita is currently the most famous and arguably the most in-demand cocktail in the world. In Los Cabos, it’s the No. 1 choice of imbibers, no close second.

It’s a simple drink with only three ingredients, but there are many variations. The basic Margarita calls for 2 ounces of tequila, 1 ounce of orange liqueur, and one ounce of fresh lime juice. Salt on the rim of the glass is optional. The drink is generally served shaken with ice or blended with ice (frozen). A proper Margarita is traditionally served in the eponymous Margarita glass, a stepped-diameter variant of a champagne coupe. But like the drink itself, the glassware varies. 

The first known publication of a Margarita recipe was in the December 1953 issue of Esquire, but most mixologists trace its origin to the Prohibition era, when Americans drifted over the border for alcohol. The Daisy (Margarita is Spanish for "daisy") was remade with tequila instead of brandy. The rest, as they say, is history.

Lobby Bar, Pueblo Bonito Sunset Beach. Antonio Palacios, head sommelier for wines and distillates at Pueblo Bonito Resorts, is a master. He lived in Jalisco near the state’s tequila-producing region to learn how blue Weber agave (the only kind of agave used to make tequila) is cultivated, harvested and distilled. He is based at Sunset Beach and has personally trained the Lobby Bar staff in the creation of the Signature Margarita. It is made with Clase Azul tequila (the one in the blue and white ceramic bottle), Cointreau, Grand Marnier, agave syrup, fresh lime and lemon juice. It is impeccable. Enjoy the banter in the wood-beamed bar--or savor the drink on the open-air terrace.

The After at Quivira. A stylish, urban-themed sports bar opened last year within The Market culinary hall, The After at Quivira’s well-stocked bar offers more than 100 labels of distilled spirits. That includes a definitive collection of fine tequilas. The cocktail menu features creative takes on many of the classics, but if you’re stuck for a choice, the Strawberry Margarita is a specialty of the house. Or have the bartender create a special flavor for you. Enjoy a televised sporting event, admire the trendy backlit décor or, better yet, repair to The After’s large wraparound terrace, which offers a beautiful ocean view. 

 

Quivira Steakhouse. Located in the thatched roof clubhouse at Quivira Golf Club set between the indoor / outdoor restaurant, the club’s oblong bar is one of the best 19th holes in Los Cabos. Yes, the bartenders have mastered the art of shaking up the perfect Margarita. (Ask for a Margarita made with Don Julio Reposado tequila, a lightly-aged spirit). The setting itself will amplify the flavor and headiness of the elixir: the bar is less than 100 yards (a short wedge shot) from the thundering surf. It’s a magical spot at sunset.

Peninsula Lounge. This relaxing, open-air bar and lounge at Pueblo Bonito Pacifica is a stone’s throw from the beach and sits adjacent to the Peninsula restaurant. With its smooth wooden deck and plush, comfortable seating, it’s a great place to relax and unwind at the end of the day. The lounge is known for its superb array of hand-crafted artisanal cocktails, none better than a classic Margarita on the rocks. It pairs well with the 20 different small plates and appetizers on the menu, including Braised Local Pork Bun, Crispy Calamari, and Steamed Quinoa.
